Ingredients

1 medium ripe but firm avocado, peeled and pitted

2 scallions, white and green portions, chopped

3 tbsp fresh cilantro, chopped

3 tbsp fresh basil, chopped

2 tbsp fresh flat-leaf parsley, chopped

1/4 cup fresh lemon or lime juice

3 tbsp liquid nondairy creamer

1 tbsp olive oil

8 oz low-protein pasta of choice

Salt and pepper, to taste
Instructions

In a blender or food processor, puree the avocado, onions, cilantro, basil, parsley, lemon juice, creamer, and oil until smooth.

Season with salt and pepper.

Boil pasta in salted and oiled water according to package directions. Drain and add to salsa in a large bowl. Chill until ready to serve cold.
