1/4 of a medium zucchini
1 tbsp tomato paste
1 tsp olive oil
1 tsp balsamic vinegar
1/4 tsp dried oregano
Pinch of salt
2 tbsp Daiya® mozzarella style shreds
Preheat the oven to 350°F.
Cut the zucchini into six 1/4-inch thick rounds.
In a small bowl, whisk together the tomato paste, olive oil, balsamic vinegar, dried oregano, and salt.
Spread the mixture evenly on the zucchini.
Top with the Daiya® mozzarella style shreds.
Place on a baking sheet and bake for 15 minutes, or until the shreds start to melt.
Cool slightly and serve.
