Sweet, sour, and salty—the perfect combination! Use this recipe to turn any mixture of veggies into an easy, flavor-packed stir-fry.

Ingredients

  • 2 medium cloves garlic, minced

  • 1 tbsp fresh ginger, minced

  • 4 scallions, white portion only, minced

  • 3 tbsp honey

  • 3 tbsp lemon juice

  • 3 tbsp light soy sauce

  • 2 tbsp ketchup

  • 1 tsp cornstarch

  • 1 tbsp water

  • 1 1/2 tsp canola oil

  • 2 to 3 cups vegetables of choice, *cut into 2-inch strips

Instructions

  1. In a small bowl, combine the garlic, ginger, and scallion whites.

  2. In another small bowl, combine the honey, lemon juice, soy sauce, and ketchup; stir until smooth.

  3. In a third bowl, dissolve the cornstarch in the water.

  4. Heat oil in a skillet over medium-high heat. Add the garlic-ginger mixture, and cook for 1 minute. Stir-fry vegetables of choice with the garlic mixture until just about cooked, approximately 8 to 10 minutes. Add the honey-lemon juice mixture, and cook for 1 to 2 minutes more.

  5. Reduce the heat, and quickly stir in the cornstarch mixture. Allow the sauce to come to a boil and thicken before serving.
