2 medium cloves garlic, minced
1 tbsp fresh ginger, minced
4 scallions, white portion only, minced
3 tbsp honey
3 tbsp lemon juice
3 tbsp light soy sauce
2 tbsp ketchup
1 tsp cornstarch
1 tbsp water
1 1/2 tsp canola oil
2 to 3 cups vegetables of choice, *cut into 2-inch strips

In a small bowl, combine the garlic, ginger, and scallion whites.
In another small bowl, combine the honey, lemon juice, soy sauce, and ketchup; stir until smooth.
In a third bowl, dissolve the cornstarch in the water.
Heat oil in a skillet over medium-high heat. Add the garlic-ginger mixture, and cook for 1 minute. Stir-fry vegetables of choice with the garlic mixture until just about cooked, approximately 8 to 10 minutes. Add the honey-lemon juice mixture, and cook for 1 to 2 minutes more.
Reduce the heat, and quickly stir in the cornstarch mixture. Allow the sauce to come to a boil and thicken before serving.
