Ingredients

5 cups seedless watermelon, coarsely chopped

1/2 medium English cucumber, peeled and coarsely chopped

1/2 medium yellow bell pepper, coarsely chopped

1/3 cup scallions, white and green portions, chopped

3 tbsp fresh mint, chopped

1/4 cup fresh lime juice

1/2 tsp salt

1/2 tsp hot sauce

1 small clove garlic, minced

2 cups cranberry-raspberry juice
Instructions

Combine all ingredients, except juice, in a large bowl and stir well. Place half of this mixture in a food processor or a blender. Pulse 4 to 6 times, until finely chopped but some texture still remains.

Pour mixture into a large container. Repeat procedure with the remaining watermelon mixture. Stir in juice. Chill thoroughly before serving.
