Ingredients

1/2 cup vegetable shortening

1/3 cup, softened margarine

2 tsp granulated (white) sugar

1/4 cup, packed brown sugar

1 package vanilla instant pudding

1 tsp vanilla extract

2/3 cup canned pumpkin

1/4 cup mini chocolate chips

2 cups low-protein baking mix

1 1/2 tsp baking powder

1/2 tsp salt
Instructions

Preheat your oven to 375°F.

In a medium bowl, mix the shortening, margarine, and sugars until well blended.

Add the pudding mix and vanilla extract. Mix well.

Stir in the low-protein baking mix, baking powder, salt, pumpkin, and chocolate chips, and thoroughly combine.

Using clean hands, shape the dough into small walnut-sized balls, and place evenly on an ungreased cookie sheet.

Flatten the balls with the back of a fork or spoon to make the cookies disc shaped.
