1 large carrot, peeled and cut into thin matchsticks
1/2 small jicama, peeled and cut into thin matchsticks
2 cups iceberg lettuce, shredded
1/2 cup fresh cilantro, chopped
1 tbsp onion, minced
1 small jalapeño pepper, minced
1 medium clove garlic, minced
3 tbsp fresh lime or lemon juice
1/4 cup canola oil
Salt and pepper, to taste
Combine all the salad ingredients in a medium bowl.
Combine onion, jalapeño, garlic, and lime or lemon juice in a small bowl.
Gradually whisk in oil.
Season to taste with salt and pepper.
Just before serving, toss salad with dressing.
