Ingredients

  • 1/4 cup and 3 tbsp olive oil, separated
  • 1 tsp salt
  • 3/4 tsp pepper
  • 1 1/2 lbs green beans, trimmed and cut into 3-inch pieces
  • 3 large Anjou pears, cored and cut into 8 wedges
  • 1 tsp sugar
  • 2 tbsp white wine vinegar
  • 1 tsp dijon mustard
  • 1 clove garlic, minced

Instructions

  1. In a large nonstick skillet over medium heat, add 2 tbsp olive oil, salt, and pepper. Add green beans, and toss to coat. Then sauté for 10 minutes or until tender.

  2. Add pears to the skillet along with 1 tsp sugar and an additional 1 tbsp of olive oil. Sauté 5 minutes. Remove from heat before the pears become too soft.

  3. In a small bowl, whisk together the vinegar, mustard, and garlic. Add 1/4 cup olive oil, whisking constantly until dressing is completely blended and has thickened. Add salt and pepper, to taste.

  4. Pour dressing over the green bean–pear mixture, and toss gently to combine. Serve warm.
